Sodium Erythorbate is a white to yellowish white crystalline or crystalline powder, odorless and slightly salty. In the dry state, it is quite stable in the air, but in an aqueous solution, it is easy to oxidize when it meets air, metal, heat, and light. Easily soluble in water, the solubility is 55 g/100 mL, and the pH of 1% aqueous solution is 7.4, which is almost insoluble in ethanol.
